Chicken with Olives and Red Peppers

6 portions chicken(legs and thighs are best), 1/2 jar roasted red peppers thinly sliced, 9 oz.black olives, 2-3 ripe tomatoes finely diced, 1 small glass red wine, 2 onions finely diced, 1c.olive oil, salt and pepper, pinch of thyme...In a pot, heat the oil, add the chicken portions and brown for about 10 minutes. Add the onions, the peppers, and the pitted olives while stirring. Pour in the wine. Next, add the tomatoes, the thyme, the salt and pepper and water to cover. Continue cooking over a medium flame for about an hour and a half.
