This garlic sauce is excellent served with fish, lamb and beets. 9 medium red potatoes, 12 garlic cloves, 1 1/2 c. vegetable oil, 1 c. olive oil, 1 1/2 c. vinegar, 2tsp. salt...Peel and wash potatoes. Cut into small pieces and place in pot. Cover with water and boil for 30 minutes. Meanwhile, peel garlic cloves and place in blender. Add oils, vinegar and salt and process for 1 minute on low speed. Then switch to high speed and liquify 1 minute longer. Set aside. Drain potatoes well. While hot, press through a food mill into a bowl. Gradually add the oil mixture, folding with spatula until ingredients are well blended. Serve immediately or cover and set aside in refrigerator.
